create new address in receive tab of your client.
in order to mine X11 coins you need to get sph-sgminer. sources are available from here, download links for precompiled windows binaries and usefull information on setup can be found on official sph-sgminer thread.
if you want to mine with cpu you can use darkcoin-cpuminer. source is here, precompiled windows versions can be found here. detailed info on general cpuminer usage can be found here.
when everything is in place, you would run something like this (darkcoin used as an example):
./sgminer -k darkcoin -o p2pool.kosmoplovci.org:[PORT] -u [YOUR_WALLET_ADDRESS] -p x
or
./minerd -a X11 -o p2pool.kosmoplovci.org:[PORT] -u [YOUR_WALLET_ADDRESS] -p x

in order to mine scrypt coins you need to get cgminer or other scrypt miner like bfgminer, sgminer or similar. go here to get you up and running on windows and here to get the proper source.
instructions for tweaking scrypt are all over the internets, its always a good place to check community shared settings for your gpu in litecoin mining hardware comparison database. generally, scrypt likes higher memory clock and lower gpu clock. i use 925/1350 on 7870 to get stable ~400khs.
